Chocolate Chocolate Chip Cake

I found this delightful recipe at Favorite Family Recipes (www.favfamilyrecipes.com) one of my favorite places to look at recipes. It is her version of Nothing Bundt Cakes Chocolate Chocolate Chip Cake. I love the picture... makes me kinda want to try to dip my finger in that fluffy frosting!


Chocolate Chocolate Chip Cake
1 pkg. devils food cake, German chocolate cake, or chocolate cake mix
1 pkg. instant chocolate pudding
1 c. sour cream
4 large eggs
1/2 c. water
1/2 c. oil
1 1/2 c. mini chocolate chips
2 (8 ounce) pkgs. cream cheese, softened
1/2 c. butter, softened
3-4 c. powdered sugar
2 tsp. vanilla extract

Mix first six ingredients together with a beater. Add chocolate chips. Pour into a greased bunt cake pan (cooking spray works best). Cook in oven at 350 degrees for 45-50 mins. Remove from oven. Let cool for 20 mins. Remove from pan. (I think it tastes best if you put it on a serving plate, wrap it well in Saran Wrap, and let it sit overnight in the fridge before frosting and serving..) In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the powdered sugar (start with 2 cups then keep adding more until it is nice and
thick). That's it!

Triple Chocolate Bundt Cake

I've been handed down this recipe from my Mom, but I think it originally came from my Great Aunt Karen. I like it with a little bit of powdered sugar dusted on top, but I really love it with a big dollop of fluffy cream cheese frosting (recipe for this is with the Carrot Cake recipe). Today (1/27) is National Chocolate Cake Day so I think it is very fitting to make this for dessert.

By the way, weird side note, chocolate cake makes me think of the Trunchbull from my favorite book/movie "Matilda." That cakes looked so creamy and delicious- but definitely couldn't eat the WHOLE thing! :)

Triple Chocolate Bundt Cake
1 chocolate cake mix
1 small box instant pudding
2 eggs
1/4 cup oil
1 1/4 cup water
1 pkg. chocolate chips
Mix cake mix, dry pudding, eggs, oil and water until smooth. Fold in chocolate chips. Pour into greased bundt cake pan. Bake 35-45 minutes at 350 degrees. Cool in pan for 5 minutes and then tip out onto cooling rack. Dust with powdered sugar.

Pumpkin Crunch Cake

I found this picture on Pinterest.com (AKA: my new way to waste time!) and the recipe is from thepickyapple.comThe picture looked marvelous and it is so easy to make. I have not yet tried this, but it's on my list of things to make SOON. If you try it first, let me know if it is as good as it looks! Yumm!

Pumpkin Crunch Cake

1 yellow cake mix
1 can (15 oz.) pumpkin puree
1 can (12 oz.) evaporated milk
3 eggs
1 1/2 cups sugar
1 tsp cinnamon (I think I'd double this)
1/2 tsp salt
1 1/2 cups chopped pecans (Original recipe calls for 1/2 cup, so add to your liking)
1 cup butter, melted

Heat oven to 350. Mix pumpkin, milk, eggs, sugar, cinnamon and salt. Pour into greased 9 by 13 pan. Sprinkle with dry cake mix. Top with pecans. Drizzle with butter. Bake for 50 to 55 minutes or until toothpick tests clean.


Chocolate Chip Pie

Seriously, who doesn't love chocolate? I love this warm, gooey, sweet pie. I think it is best accompanied by some really good vanilla ice cream so that the warmth of the pie causes the ice cream to melt just a little. Mmmm, totally daydreaming about eating this right now! Make this soon! You won't be sorry!

Chocolate Chip Pie
1 unbaked 9 inch deep-dish pie shell*
2 large eggs
1/2 cup flour
1/2 cup sugar
1/2 cup packed brown sugar
3/4 cup (1 1/2 sticks) butter, softened
1 cup semi-sweet chocolate morsels
1 cup chopped nuts
Sweetened whipped cream or ice cream

 *If using a frozen pie shell THAW completely. Bake on baking sheet; increase baking time slightly.
Preheat oven to 325. Beat eggs in a mixer bowl until foamy. Beat in flour and sugars. Beat in butter. Stir in chocolate chips and nuts. Spoon into pie shell. Bake for 55 to 60 minutes or until a knife inserted in center comes out clean. Cool on wire rack for 10 minutes. Serve warm with topping.

Taffy Apple Pizza

I have never made this, just had it in my recipe box for years. Maybe one day I'll actually try it. Or you can do it for me and tell me how it is :) This makes me really want a caramel apple. Mmmmm, caramel! Makes 4 servings- I would probably double it.

Taffy Apple Pizza
1/2 cup refrigerated sugar cookie dough
3 oz. softened cream cheese
2 Tb brown sugar
2 Tb creamy peanut butter
1/4 tsp vanilla
1/2 tart apple, sliced thinly (Granny Smith green apple)
1 TB chopped unsalted peanuts
1/4 tsp cinnamon
2TB caramel ice cream topping

With floured hands, pat cookie dough onto pizza pan coated with cookie spray. Cook at 350 for 12-14 minutes or until lightly browned. Let cool. Beat cream cheese, brown sugar, peanut butter and vanilla. Spread over cookie crust. Arrange apple slices on top. Sprinkle with peanuts and cinnamon. Drizzle with warm caramel. Cut into wedges.

Carrot Cake with Cream Cheese Frosting

This is my FAVORITE cake! I request it every year for my Birthday (it just tastes better when my Mom makes it!) This recipe comes from my Grandma Ina. I love the chocolate chips and raisins in this. My Mom only makes 1/2 of the frosting, but I like to make the whole recipe. It's yummy when its still a tiny bit warm in the middle and the frosting melts along with the vanilla ice cream. Mmmm! Gooey sweetness at its best!
Carrot Cake and Cream Cheese Frosting
1 cup sugar
1 cup brown sugar
2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
2 tsp cinnamon
1 cup vegetable oil
4 eggs, beat lightly
3 cups carrot, grated
1 medium can pineapple, crushed
1 cup nuts (optional, I do not add these)
1 cup raisins
1 cup semi-sweet chocolate chips
 Mix all dry ingredients. Add oil and eggs, carrots and pineapple. Mix well. Fold in nuts, raisins and chocolate chips. Bake in a greased 9 by 13 pan at 325 degrees for 1 hour or until center springs back to touch or knife inserted in the middle comes out clean. Cool completely. Frost.

Cream Cheese Frosting
1 8 oz. pkg cream cheese, softened
1/4 cup butter, softened
2 tsp vanilla
1 lb. powdered sugar
Mix together until smooth. Lick the batters, and the spoon, and the bowl :) Enjoy!

Apple Crisp

There's nothing so yummy to me than the smell of this recipe- warm apples and cinnamon. This is great with caramel sauce drizzled over the top and vanilla ice cream slowly melting making it even more enticing. MMM! This is a basic recipe, anyone have a better one and want to share?

Apple Crisp
6 to 8 apples (I like Granny Smith)
3/4 cup brown sugar
1/2 cup oatmeal
1/4 cup flour
1/3 cup butter
1 tsp pumpkin pie spice (I like to double this)
Peel and slice apples and place them in a 9 by 13 pan. Crumble the rest of the ingredients together and sprinkle over the apples. Bake at 375 degrees for 40- 45 minutes or until apples are tender and toppings are golden brown and bubbly.

Banana Cake with Cream Cheese Frosting

What a better way to use those over ripe bananas... CAKE! I love this cake (and the frosting- my favorite!) This is another recipe from my Mom's collection. So great on it's own or with a little bit of ice cream.

Banana Cake
1/2 cup butter
1 1/2 cups sugar
2 eggs
1 cup sour cream
1 tsp vanilla
2 cups flour
1 tsp baking soda
1/4 tsp salt
2 medium ripe bananas, smashed (1 cup)
Cream Cheese Frosting
1 pkg cream cheese, softened
1/2 cup butter, room temp
2 tsp vanilla
4 cups powdered sugar

Cream butter and sugar. Add eggs, sour cream and vanilla. Combine flour, soda and salt. Add to creamed mixture. Stir in bananas. Spread in a greased 9 by 13 pan. Bake at 350 degrees for 22 to 30 minutes or until test done. Cool completely before frosting. For frosting, cream all ingredients until fluffy. Frost cake. Sprinkle with chopped nuts if desired. Store in refrigerator.

Pumpkin Cranberry Bread

Just pulled this out of a magazine. I have yet to try it, but as soon as I get some mini-loaf pans I'll be baking away. I love fall- especially the flavors! This would be a great neighbor, teacher, friend (crazy lady with recipe blog) treat. If you try it before I do, let me know how it turns out!

Pumpkin Cranberry Bread
3 cups flour
1 Tb plus 2 tsp pumpkin pie spice
2 tsp baking soda
1 1/2 tsp salt
3 cups sugar
1 can (15 oz.) pure Pumpkin
4 large eggs
1 cup vegetable oil
1/2 cup orange juice or water
1 cup sweetened dried, fresh or frozen cranberries
Preheat the oven to 350. Grease and flour two 9 by 5 loaf pans (for other sizes see bottom of directions). Combine flour, pumpkin pie spice, baking soda and salt. Combine sugar, pumpkin, eggs and oil; beat until just blended. Add pumpkin mixture to flour mixture; stir until just moistened. Fold in cranberries. Spoon batter into prepared loaf pans. Bake for 60 to 65 minutes or until tooth pick inserted in center comes out clean. Cool in pans on wire racks for 10 minutes; remove to racks to cool completely. Makes 2 loaves.

** For three 8 by 4 inch pans: Prepare as above, bake for 55-60 minutes. For five or six 5 by3 inch mini-loaf pans: Prepare as above and bake for 50 to 55 minutes.

{Just a thought... I think I'll also try to cut the cranberries down to 1/2 cup and add 1/2 cup semi-sweet chocolate chips. Everything is better with chocolate!}

Texas Fudge Cake

For as long as I can remember our family has had this cake for my brother's Birthday. It's a little rich, so it is best to serve it with some vanilla ice cream. You can either bake it in a 9 by 13 pan or on a sheet cake- either way, it's delicious and such a great way to get a chocolate fix! Enjoy!

Texas Fudge Cake
1 cup (2 sticks) butter
1/4 cup cocoa
1 cup water
2 cups flour
2 cups sugar
1/2 tsp salt
2 eggs
1/2 cup milk
1/2 tsp baking soda
1 tsp vanilla
Bring butter, cocoa and water to a boil. In a separate bowl, mix flour, sugar and salt together. Pour hot mixture over dry ingredients and mix well. Add eggs, milk soda and vanilla. Batter will be VERY wet. Pour into a greased and floured 9 by 13 pan and bake for 45 minutes at 375 degrees.

Texas Fudge Frosting
1/2 cup (1 stick) butter
3/8 cup milk
1/4 cup cocoa
1 dash salt
1 tsp vanilla
1 lb. (3 and 3/4 cups) powdered sugar
Bring butter, cocoa, salt and vanilla to a boil. Pour over the powdered sugar and beat until smooth. (Optional: add 1/2 cup chopped nuts) Pour over the cake when cake is cooled.
