Chocolate Chocolate Chip Cake

I found this delightful recipe at Favorite Family Recipes (www.favfamilyrecipes.com) one of my favorite places to look at recipes. It is her version of Nothing Bundt Cakes Chocolate Chocolate Chip Cake. I love the picture... makes me kinda want to try to dip my finger in that fluffy frosting!


Chocolate Chocolate Chip Cake
1 pkg. devils food cake, German chocolate cake, or chocolate cake mix
1 pkg. instant chocolate pudding
1 c. sour cream
4 large eggs
1/2 c. water
1/2 c. oil
1 1/2 c. mini chocolate chips
2 (8 ounce) pkgs. cream cheese, softened
1/2 c. butter, softened
3-4 c. powdered sugar
2 tsp. vanilla extract

Mix first six ingredients together with a beater. Add chocolate chips. Pour into a greased bunt cake pan (cooking spray works best). Cook in oven at 350 degrees for 45-50 mins. Remove from oven. Let cool for 20 mins. Remove from pan. (I think it tastes best if you put it on a serving plate, wrap it well in Saran Wrap, and let it sit overnight in the fridge before frosting and serving..) In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the powdered sugar (start with 2 cups then keep adding more until it is nice and
thick). That's it!

Triple Chocolate Bundt Cake

I've been handed down this recipe from my Mom, but I think it originally came from my Great Aunt Karen. I like it with a little bit of powdered sugar dusted on top, but I really love it with a big dollop of fluffy cream cheese frosting (recipe for this is with the Carrot Cake recipe). Today (1/27) is National Chocolate Cake Day so I think it is very fitting to make this for dessert.

By the way, weird side note, chocolate cake makes me think of the Trunchbull from my favorite book/movie "Matilda." That cakes looked so creamy and delicious- but definitely couldn't eat the WHOLE thing! :)

Triple Chocolate Bundt Cake
1 chocolate cake mix
1 small box instant pudding
2 eggs
1/4 cup oil
1 1/4 cup water
1 pkg. chocolate chips
Mix cake mix, dry pudding, eggs, oil and water until smooth. Fold in chocolate chips. Pour into greased bundt cake pan. Bake 35-45 minutes at 350 degrees. Cool in pan for 5 minutes and then tip out onto cooling rack. Dust with powdered sugar.

Pumpkin Crunch Cake

I found this picture on Pinterest.com (AKA: my new way to waste time!) and the recipe is from thepickyapple.comThe picture looked marvelous and it is so easy to make. I have not yet tried this, but it's on my list of things to make SOON. If you try it first, let me know if it is as good as it looks! Yumm!

Pumpkin Crunch Cake

1 yellow cake mix
1 can (15 oz.) pumpkin puree
1 can (12 oz.) evaporated milk
3 eggs
1 1/2 cups sugar
1 tsp cinnamon (I think I'd double this)
1/2 tsp salt
1 1/2 cups chopped pecans (Original recipe calls for 1/2 cup, so add to your liking)
1 cup butter, melted

Heat oven to 350. Mix pumpkin, milk, eggs, sugar, cinnamon and salt. Pour into greased 9 by 13 pan. Sprinkle with dry cake mix. Top with pecans. Drizzle with butter. Bake for 50 to 55 minutes or until toothpick tests clean.

Carrot Cake with Cream Cheese Frosting

This is my FAVORITE cake! I request it every year for my Birthday (it just tastes better when my Mom makes it!) This recipe comes from my Grandma Ina. I love the chocolate chips and raisins in this. My Mom only makes 1/2 of the frosting, but I like to make the whole recipe. It's yummy when its still a tiny bit warm in the middle and the frosting melts along with the vanilla ice cream. Mmmm! Gooey sweetness at its best!
Carrot Cake and Cream Cheese Frosting
1 cup sugar
1 cup brown sugar
2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
2 tsp cinnamon
1 cup vegetable oil
4 eggs, beat lightly
3 cups carrot, grated
1 medium can pineapple, crushed
1 cup nuts (optional, I do not add these)
1 cup raisins
1 cup semi-sweet chocolate chips
 Mix all dry ingredients. Add oil and eggs, carrots and pineapple. Mix well. Fold in nuts, raisins and chocolate chips. Bake in a greased 9 by 13 pan at 325 degrees for 1 hour or until center springs back to touch or knife inserted in the middle comes out clean. Cool completely. Frost.

Cream Cheese Frosting
1 8 oz. pkg cream cheese, softened
1/4 cup butter, softened
2 tsp vanilla
1 lb. powdered sugar
Mix together until smooth. Lick the batters, and the spoon, and the bowl :) Enjoy!

Banana Cake with Cream Cheese Frosting

What a better way to use those over ripe bananas... CAKE! I love this cake (and the frosting- my favorite!) This is another recipe from my Mom's collection. So great on it's own or with a little bit of ice cream.

Banana Cake
1/2 cup butter
1 1/2 cups sugar
2 eggs
1 cup sour cream
1 tsp vanilla
2 cups flour
1 tsp baking soda
1/4 tsp salt
2 medium ripe bananas, smashed (1 cup)
Cream Cheese Frosting
1 pkg cream cheese, softened
1/2 cup butter, room temp
2 tsp vanilla
4 cups powdered sugar

Cream butter and sugar. Add eggs, sour cream and vanilla. Combine flour, soda and salt. Add to creamed mixture. Stir in bananas. Spread in a greased 9 by 13 pan. Bake at 350 degrees for 22 to 30 minutes or until test done. Cool completely before frosting. For frosting, cream all ingredients until fluffy. Frost cake. Sprinkle with chopped nuts if desired. Store in refrigerator.

Texas Fudge Cake

For as long as I can remember our family has had this cake for my brother's Birthday. It's a little rich, so it is best to serve it with some vanilla ice cream. You can either bake it in a 9 by 13 pan or on a sheet cake- either way, it's delicious and such a great way to get a chocolate fix! Enjoy!

Texas Fudge Cake
1 cup (2 sticks) butter
1/4 cup cocoa
1 cup water
2 cups flour
2 cups sugar
1/2 tsp salt
2 eggs
1/2 cup milk
1/2 tsp baking soda
1 tsp vanilla
Bring butter, cocoa and water to a boil. In a separate bowl, mix flour, sugar and salt together. Pour hot mixture over dry ingredients and mix well. Add eggs, milk soda and vanilla. Batter will be VERY wet. Pour into a greased and floured 9 by 13 pan and bake for 45 minutes at 375 degrees.

Texas Fudge Frosting
1/2 cup (1 stick) butter
3/8 cup milk
1/4 cup cocoa
1 dash salt
1 tsp vanilla
1 lb. (3 and 3/4 cups) powdered sugar
Bring butter, cocoa, salt and vanilla to a boil. Pour over the powdered sugar and beat until smooth. (Optional: add 1/2 cup chopped nuts) Pour over the cake when cake is cooled.
